Buttery Toffee Cookies

 
Ingredients -
1/2 Cup Granulated Sugar
1/2 Cup Butter, softened
1 Egg
1/2 Teaspoon Vanilla Extract
1 1/4 Cup All-Purpose Flour
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
4 Chocolate-Covered Toffee Bars, chopped small
 
Preparation:

1. Heat the oven to 350 degrees.

2. Combine sugar, butter, egg and vanilla extract in a large mixing bowl.

3. Beat the mixture at medium speed, scraping the bowl often for 3 to 4 minutes.

4. Add the flour, baking soda and salt.

5. Reduce the speed to low.

6. Beat, scraping the bowl often, until well mixed which takes about 1 to 2 minutes.

7. Stir in the chopped toffee by hand.

8. Drop dough by rounded teaspoonful onto lightly greased cookie sheets.

9. Bake for 10 to 12 minutes or until the cookies are lightly browned.

10. Cool for 1 minute.

11. Remove the cookies from the cookie sheets.

12. Cool on a wire rack.
