Chocolate Coconut Crisps

 
Ingredients -
2/3 Cup Flour, unbleached, sifted
1/3 Cup Unsweetened Cocoa Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
3/4 Cup Unsalted Butter, softened
1 Cup Light Brown Sugar, firmly packed
1 Egg
1/4 Cup Water
3 Cups Rolled Oats
1 Cup Flaked Coconut
 
Preparation:

1. Sift the flour, cocoa, baking soda and salt onto wax paper.

2. Beat the butter, sugar and egg in a large bowl with an electric mixer until fluffy.

3. Stir in the water.

4. Stir the flour mixture into the butter mixture, blending well.

5. Stir in the oats and coconut.

6. Drop by teaspoonfuls onto lightly greased cookie sheet.

7. Dip your fingertips in cold water.

8. Flatten the cookies slightly.

9. Bake in a 350 degree oven for 12 minutes.

10. Cool on wire racks.
