Chocolate Coconut Layered Biscotti

 
Ingredients -
3 Eggs
1 Cup Sugar
2 Tablespoon Vegetable Oil
1 Teaspoon Lemon Juice
1 Teaspoon Coconut Extract
2 3/4 Cup Flour
1-1/2 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/8 Teaspoon Salt
1/2 Cup Coconut Flakes
1 Cup Raisins
2 Tablespoons Unsweetened Cocoa Powder
1/2 Cup White Chocolate Chips
 
Preparation:

1. Beat the eggs and sugar together, until light and fluffy.

2. Add the oil, lemon juice and coconut flavoring.

3. Blend well.

4. Add flour, baking powder and soda, and salt.

5. Mix until smooth.

6. Fold in raisins and coconut.

7. Remove half the dough, onto a baking sheet.

8. Shape into a loaf, about a half-inch in height and 15 inches long.

9. Add cocoa powder to the remaining dough, and stir through.

10. Fold in chocolate chips.

11. Remove dough and form into a log the same size as the first.

12. Place chocolate loaf on top of white loaf, and press together.

13. Bake in a preheated 350 degrees oven for 25 minutes.

14. Cool for 10 minutes and then slice into 3/4 inch slices.

15. Return slices to the oven and toast on each side for 10 minutes.

Use unsalted butter when specified in the cookie recipe. If you only have salted butter available cut out as much as 50% of the additional salt called for.

Unless otherwise specified in cookie recipes, use large eggs. The size of the eggs can be the difference between a cookie being too dry or too wet.
