1. Heat the oven to 375 degrees.
2. In a large bowl, combine the butter, sugar, egg yolk, and vanilla.
3. Beat at medium speed, scraping the bowl often, until creamy.
4. Reduce the speed to low.
5. Add the flour, cinnamon, and salt.
6. Beat until mixed thoroughly.
7. Drop by tablespoon onto an ungreased baking sheet.
8. Press the dough, 1 inch apart.
9. Bake for 8 to 11 minutes or until the edges are very lightly browned.
10. Immediately press one candy into the center of each cookie.
11. Remove from the cookie sheets and cool completely.
