1. Preheat oven to 350 degrees.
2. In a large bowl, mix the sugar, butter, vanilla, and egg until creamy.
3. Sift the baking soda, salt, and flour and add to the wet mixture.
4. Stir in the coconut and cashews.
5. Using a 1/4 cup measuring cup, drop the cookie dough about 3" apart on non-stick baking sheet.
6. Flatten the cookie dough slightly.
7. Bake until the edges are golden brown which takes about 12-15 minutes.
8. Remove the cookies from the oven.
9. Cool for 2 minutes and remove from the baking sheet to a wire cooling rack.
