Cranberry Bars

 
Ingredients -
Filling:
3/4 Cup Sugar
1/2 Cup Water
2 Cups Fresh Cranberries
1/4 Cup Orange Juice
1 Tablespoon Grated Orange Peel
1 Tablespoon Butter
1/2 Teaspoon Ground Cinnamon
1/4 Teaspoon Salt
1 Cup Walnuts, chopped

Crust:
2 Cups All-Purpose Flour
1/4 Teaspoon Salt
1-1/4 Cups Cold Butter
1 Cup Sugar
3 Cups Quick-Cooking Oats
 
Preparation:

1. Bring the sugar and water to a boil in a saucepan.

2. Add the cranberries and cook until they pop which takes about 4 to 6 minutes.

3. Add the orange juice, orange peel, butter, cinnamon and salt.

4. Cook 5 minutes longer or until the mixture thickens.

5. Remove from the heat; stir in walnuts and set aside.

6. For the crust, combine the flour and salt in a bowl.

7. Cut in the butter until the mixture becomes crumbly.

8. Add in the sugar and oats.

9. Mix thoroughly.

10. Spoon half of the mixture into an ungreased 13x9x2-inch baking pan.

11. Pat firmly into the pan.

12. Spread the filling evenly over curst.

13. Top with the remaining crumb mixture and pat lightly.

14. Bake at 400 degrees for 30 to 35 minutes.

15. Cool on a wire rack.
