1. Combine the pineapple and dates in a saucepan.
2. Cook on medium heat until thickened.
3. Stir frequently.
4. Mix the oats, wheat germ, coconut, walnuts, and salt in a large bowl.
5. Stir in the juice and oil.
6. Press half of the oat mixture in a greased 9x13-inch pan.
7. Spread the pineapple mixture on top, then sprinkle on the rest of the oat mixture.
8. Press down lightly.
9. Bake at 350 degrees for 30 minutes or until lightly browned.
10. Cool.
11. Cut into squares.
