Pineapple Muffin Cookies

 
Ingredients -
1 Can Crushed Pineapple, (20 ounces)
2 Cups Dates, chopped
3 Cups Oats
1 Cup Wheat Germ
1 Cup Coconut
1 Cup Walnuts, chopped
1/4 Teaspoon Salt
1 1/4 Cup Orange Juice
1/4 Cup Coconut Oil
 
Preparation:

1. Preheat the oven to 350 degrees.

2. Cream the shortening, sugar and egg in a large mixing bowl.

3. When the mixture is light and fluffy, stir in the crushed pineapple with juice.

4. Sift the flour, baking soda, salt and nutmeg together and stir into the batter.

5. When the mixture is well blended, stir in the chopped walnuts.

6. Drop by teaspoonfuls 2 inches apart on a greased baking sheet.

7. Bake for 8-10 minutes.

8. Cool on wire racks.

Aluminum Foil

Aluminum foil placed on the baking sheet keeps cookies from spreading too thin. Foil sheets can easily be wiped off and re-used.

Cookie Cooling

Some cookies need to be moved to cooling racks almost immediately to stop the cooling process. Buy a cooling rack that has at least a ½” room for air to circulate.
