Raspberry Patch Crumb Bars

 
Ingredients -
3 Cups All-Purpose Flour
1-1/2 Cups Sugar, divided
1 Teaspoon Baking Powder
1/4 Teaspoon Salt
1/4 Teaspoon Ground Cinnamon
1 Cup Shortening
2 Eggs, lightly beaten
1 Teaspoon Almond Extract
1 Tablespoon Cornstarch
4 Cups Fresh or Frozen Raspberries
 
Preparation:

1. Combine the flour, 1 cup sugar, baking powder, salt and cinnamon in a medium bowl.

2. Cut in the shortening until the mixture resembles coarse crumbs.

3. Stir in the eggs and almond extract.

4. Press two thirds of the mixture into a greased 13 x 9 inch baking dish.

5. Combine the cornstarch and remaining sugar in a large bowl.

6. Add the berries and gently toss.

7. Spoon over crust.

8. Sprinkle with the remaining crumb mixture.

9. Bake at 375 degrees for 35 to 45 minutes or until bubbly and golden brown.

10. Cool.

11. Cut into bars.

A food processor or blender can make easy work out of nut grinding. Be careful not to over process or you can turn fine powder into paste.
