Tropical Biscotti

 
Ingredients -
3 Cups All-Purpose Flour
1 Tablespoon Baking Powder
1/2 Teaspoon Salt
3 Large Eggs
1 Cup Sugar
1/2 Cup Unsalted Butter, melted
1 Teaspoon Almond Extract
1 Teaspoon Vanilla Extract
1 Cup Salted Macadamia Nuts, coarsely chopped
3/4 Cup Sweetened Shredded Coconut
3/4 Cup Dried Cranberries
1/2 Cup Dried Mango, chopped
3 Tablespoons Crystallized Ginger, finely chopped
 
Preparation:

1. Heat the oven to 325 degrees.

2. Grease 2 large cookie sheets.

3. In a bowl, mix the flour, baking powder and salt.

4. Beat the eggs and sugar 1 minute in a large bowl.

5. Add the butter, almond extract and vanilla, beat until blended.

6. Add the flour mixture to the wet, beating until blended.

7. Stir in the nuts, coconut, cranberries, mango and ginger.

8. Divide the dough into 3 equal pieces.

9. On 1 cookie sheet, shape 2 pieces of dough into 12x2" logs.

10. Repeat with the remaining piece of dough on a second cookie sheet.

11. Bake for 30 minutes.

12. Cool on the sheets for 30 minutes.

13. Reduce the oven temp to 275 degrees.

14. Place the logs on a cutting board and cut them crosswise on a sharp diagonal into 1/2" thick slices.

15. Place the slices upright on cookie sheets.

16. Bake for 30 minutes.

17. Cool completely, then serve.
